1Thoroughly clean the Mussels under cold running water, scrubbing shells and removing any beards. Discard any Mussels that are open and do not close when tapped.
2In a large, heavy-bottomed pot, heat the Extra-virgin olive oil over medium heat. Add the sliced Garlic and Red pepper flakes, cooking gently until the Garlic is fragrant, about 2 minutes, being careful not to brown it.
3Add the cleaned Mussels to the pot and pour in the Dry white wine. Cover the pot tightly and cook for 3-5 minutes, shaking the pot occasionally, until all the Mussels have opened. Discard any Mussels that remain closed.
