1Rinse the fresh cod fillet thoroughly under cold running water and pat it completely dry with paper towels.
2Generously coat the fresh cod fillet on all sides with coarse sea salt. Place the salted cod in a non-reactive dish, cover, and refrigerate for 24 hours to cure.
3After 24 hours, remove the salted cod from the refrigerator. Rinse the salted cod under cold running water to remove excess salt. Gently squeeze the cod to remove as much moisture as possible.
