1In a small bowl, dissolve the Fresh yeast in 50 grams of the lukewarm Water, stirring gently. Let it rest for 5 minutes until slightly foamy.
2In a large mixing bowl, combine the 00 flour and Fine semolina flour. Add the Fine sea salt and mix well.
3Pour the dissolved Fresh yeast mixture, the remaining lukewarm Water, and Extra-virgin olive oil into the flour mixture. Mix with a spoon or your hands until a shaggy dough forms.
