Place the chicken breast in a pot and cover with water. Add a pinch of salt. Bring to a boil, then reduce heat and simmer until the chicken breast is fully cooked and tender, approximately 20-25 minutes. Remove the chicken breast from the pot, reserving 250 grams of the chicken cooking liquid.

Once cooled slightly, shred the cooked chicken breast into very fine strands using your hands or two forks. Set aside.

Soak the stale white bread (crusts removed) in a small amount of the reserved chicken cooking liquid until completely softened. Squeeze out any excess liquid.
