1In a large bowl, whisk together the All-purpose flour, 30g of Granulated sugar, 5g of Ground Mexican cinnamon, and Salt.
2In a separate bowl, whisk the Large eggs, Whole milk, and Vanilla extract until well combined.
3Gradually add the wet ingredients to the dry ingredients, whisking continuously until a smooth, lump-free batter is formed. The consistency should be similar to thin pancake batter. Let the batter rest for 15 minutes.
