1Rinse the goat meat thoroughly under cold running water and pat dry with paper towels. Cut the goat meat into large, manageable pieces if not already portioned.
2Peel and roughly chop the carrots, celery stalks, and white onion. Peel the garlic cloves and leave them whole.
3In a very large heavy-bottomed pot, place the prepared goat meat. Add the chopped carrots, celery stalks, white onion, and whole garlic cloves.
