In a large bowl, combine Atta flour and 5 grams of Salt. Add 20 grams of Ghee and mix well with your fingertips until crumbly.

Gradually add Water, kneading to form a smooth, pliable dough. Cover the dough with a damp cloth and let it rest for 20 minutes.

While the dough rests, prepare the filling. Crack Eggs into a separate bowl. Add finely chopped Onion, finely chopped Green chili, finely chopped Fresh cilantro, Red chili powder, Cumin powder, Garam masala, and the remaining 2 grams of Salt. Whisk everything together until well combined.
