2Add the Lard to the flour mixture and rub it in with your fingertips until the mixture resembles coarse crumbs.
3Gradually add the Water, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
