1Rinse pork neck bones thoroughly under cold running water. Place pork neck bones in a large pot, cover with fresh water, and bring to a rolling boil. Boil for 10 minutes, then drain the water and rinse the pork neck bones again to remove any impurities.
2Return the blanched pork neck bones to the clean pot. Add 3000g water. Bring to a boil, then reduce the heat to low, cover, and simmer for 2 hours, skimming any foam that rises to the surface.
3While the broth simmers, place dried gulfweed in a large bowl and cover with cold water. Soak for at least 1 hour until the dried gulfweed is fully rehydrated and soft. Drain the water, rinse the gulfweed several times, and squeeze out any excess water. Chop the rehydrated gulfweed into 5cm pieces.
