1Clean the Whole Branzino thoroughly, removing scales and guts. Make two or three diagonal scores on each side of the fish to help it cook evenly. Pat the Whole Branzino completely dry with paper towels.
2Slice 20 grams of Fresh Ginger into thin pieces and cut 30 grams of Scallions into 5cm lengths. Stuff some of these Fresh Ginger slices and Scallions into the cavity of the Whole Branzino and place the remaining on top of the fish. Sprinkle the Whole Branzino with White Pepper Powder and drizzle with Shaoxing Wine.
3Prepare a large steamer by bringing water to a rolling boil.
