1Slice the Beef flank steak thinly against the grain. In a bowl, combine the sliced Beef flank steak with 30g Light soy sauce, 10g Dark soy sauce, 20g Shaoxing wine, 15g Corn starch, 2g Baking soda, 30g Water, and 2g White pepper. Mix well and marinate for at least 15 minutes.
2Prepare the sauce by combining 30g Light soy sauce, 20g Shaoxing wine, 40g Oyster sauce, 10g Sugar, 1g White pepper, and 50g Water in a small bowl. In a separate small bowl, mix 10g Corn starch with 30g Water to create a slurry.
3Heat a wok over high heat until smoking. Add 50g Vegetable oil. Once the oil is hot, add the marinated Beef flank steak and stir-fry quickly for 1-2 minutes until just browned on the outside but still slightly pink inside. Remove the Beef flank steak from the wok and set aside.
