1To prepare the pate brisee, combine the All-purpose flour and Fine sea salt in a large bowl.
2Cut 125g of the Unsalted butter into small cubes and add to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles coarse sand.
3Gradually add the Cold water, mixing just until the dough comes together. Do not overmix. Form the dough into a disc, wrap it in plastic film, and refrigerate for at least 30 minutes.
