1Thoroughly clean the Pig lung by flushing it repeatedly under running Water through the windpipe until the Water runs clear. Gently squeeze to remove any remaining blood or impurities. Repeat this process multiple times.
2Place the cleaned Pig lung in a large pot with enough cold Water to cover. Add 25 grams of Fresh Ginger slices and all of the Shaoxing wine. Bring to a boil, then simmer for 10 minutes. Remove the Pig lung, rinse under cold Water, and cut into bite-sized pieces.
3Soak the Dried Southern Almonds and Dried Northern Almonds in warm Water for at least 30 minutes, then rinse.
