1Place the Russet potatoes in a large pot and cover with cold water. Add a generous pinch of fine sea salt. Bring to a boil and cook until the Russet potatoes are very tender and easily pierced with a fork, about 20-25 minutes. Drain the Russet potatoes thoroughly and return them to the pot.
2While the Russet potatoes are cooking, heat a small amount of vegetable oil in a skillet over medium heat. Add the white onion and sauté until translucent, about 5 minutes. Add the garlic cloves and cook for another minute until fragrant. Remove from heat.
3Mash the cooked Russet potatoes in the pot until smooth. Stir in the sautéed white onion and garlic cloves, then season with fine sea salt and black pepper to taste. Mix well to combine.
