1Ensure the beef sirloin is very fresh and chilled. Carefully slice the beef sirloin thinly against the grain, then julienne it into fine strips, approximately 0.5 cm wide.
2Peel the Korean pear and julienne it into similar-sized strips as the beef sirloin. Place the julienned Korean pear in a bowl of cold water to prevent browning, then drain well just before serving.
3Peel and finely mince the garlic.
