1Peel the Potatoes and cut them into quarters. Boil the Potatoes in salted water until very tender, about 15-20 minutes. Drain the Potatoes thoroughly and mash them completely until smooth. Let the mashed Potatoes cool slightly.
2In a large bowl, combine the mashed Potatoes, All-purpose flour, Sweet rice flour, and 2 grams of the Salt. Gradually add the Water and knead the mixture until a soft, pliable dough forms. Adjust Water if necessary to achieve a non-sticky dough. Cover the dough and set aside.
