1In a small bowl, dissolve the Fresh brewer's yeast in the lukewarm Water and let it sit for 5 minutes until foamy.
2In a large mixing bowl, combine the 00 flour and Fine sea salt. Add the softened Lard to the flour mixture.
3Pour the yeast and Water mixture into the flour and Lard. Mix with your hands or a stand mixer until a shaggy dough forms.
