1Rinse the Oxtail pieces thoroughly under cold running water. Place the Oxtail in a large pot, cover with cold water, and bring to a boil. Boil for 10 minutes, then drain, rinse the Oxtail again, and clean the pot. This step removes impurities.
2In the clean large pot or Dutch oven, heat the Extra-virgin olive oil over medium-high heat. Add the Oxtail pieces and brown them well on all sides. Remove the browned Oxtail and set aside.
3Reduce the heat to medium. Add the diced Guanciale to the pot and render until crispy, about 5-7 minutes. Remove the crispy Guanciale and set aside, leaving the rendered fat in the pot.
