1Thoroughly clean the whole duck, removing any excess fat and patting it completely dry inside and out with paper towels.
2In a small bowl, combine the salt and five-spice powder. Rub this mixture generously all over the duck, inside and out.
3Stuff the cavity of the duck with 50g of sliced ginger, 50g of cut scallions, star anise, and Sichuan peppercorn.
