Wash the Jasmine rice thoroughly until the water runs clear. Soak the Jasmine rice in 500g of Water for at least 30 minutes.

While the rice soaks, prepare the seafood. In a bowl, combine the Shrimp, Scallops, Squid, and Fish fillet with Shaoxing wine. Gently toss to coat and set aside to marinate for 15 minutes.

Drain the soaked Jasmine rice and transfer it to a large heavy-bottomed pot. Add the remaining 1500g of Water and the sliced Ginger.
