1Thoroughly wash the Green Ume Plums under cold running water to remove any dirt or residue. Gently pat them dry with a clean cloth.
2Using a toothpick or skewer, carefully remove the small stem (heso) from each Green Ume Plum. This prevents bitterness.
3Sterilize a large glass jar (approximately 4-liter capacity) by washing it with hot water and soap, then rinsing thoroughly. Allow it to air dry completely or dry in a low oven to ensure no moisture remains.
