1In a large mixing bowl, combine the Non-glutinous rice flour and Salt.
2Gradually add the Hot water to the flour mixture, stirring with a spoon until a shaggy dough forms. Be careful as the water is hot.
3Once cool enough to handle, knead the dough vigorously by hand for 10-15 minutes until it is smooth, elastic, and uniform. Cover the dough with a damp cloth to prevent it from drying out.
