Pat the very thinly sliced Beef sirloin dry with a paper towel to remove any excess moisture.

In a large mixing bowl, combine the Soy sauce, grated Asian pear, Minced garlic, Minced ginger, Sugar, Mirin, Sesame oil, and Black pepper. Whisk well to create the marinade.

Add the Beef sirloin to the marinade, ensuring each slice is coated. Gently mix by hand for about 1-2 minutes. Gwangyang bulgogi is traditionally marinated only briefly, sometimes even just before grilling.
