1In a large bowl, dissolve 10 grams of fresh yeast in 300 grams of warm water.
2Add 300 grams of "00" flour, 200 grams of semolina flour, and 10 grams of fine sea salt to the bowl. Mix until a shaggy dough forms.
3Turn the dough out onto a lightly floured surface and knead for 10-12 minutes until smooth and elastic. Incorporate 30 grams of extra-virgin olive oil during the last few minutes of kneading.
