1Rinse Chana dal and Urad dal thoroughly. Soak both dals in water for at least 2 hours.
2Drain the soaked dals completely. Transfer the drained dals to a grinder along with Ginger, Green chili (for vadai), Fennel seeds, Cinnamon stick, and Cloves. Grind to a coarse paste, adding minimal water if necessary. The paste should be thick and not smooth.
3Transfer the ground dal mixture to a bowl. Add the finely chopped Onion (for vadai), Curry leaves (for vadai), chopped Fresh cilantro (for vadai), and Salt (for vadai). Mix well to combine all ingredients.
