1Rinse the Short-grain rice thoroughly under cold running water until the water runs clear. Drain and set aside.
2Place the Dried shiitake mushrooms in a bowl and cover with 200g of warm Water. Let them soak for at least 30 minutes, or until fully rehydrated and soft. Reserve the shiitake mushroom soaking water.
3Once rehydrated, remove the stems from the Dried shiitake mushrooms and thinly slice the caps. Mince the Garlic and chop the Green onion.
