1Pat the chicken breast very dry with paper towels and season evenly with salt on all sides.
2Heat a frying pan over high heat until very hot. Place the seasoned chicken breast in the pan and sear each side for approximately 30-45 seconds, just until a light golden crust forms, leaving the center rare.
3Immediately transfer the seared chicken breast to a bowl of ice water and let it chill for 5 minutes to stop the cooking process and maintain its rare interior.
