1Place Rice vermicelli noodles in a large bowl and cover with hot water. Soak for 10-15 minutes until pliable but still firm. Drain thoroughly and set aside.
2Slice Pork shoulder into thin shreds. In a small bowl, marinate the shredded Pork shoulder with 5g Light soy sauce and 5g Shaoxing wine for 10 minutes.
3Julienne the Carrot and shred the Cabbage. Mince the Garlic and Ginger. Slice the Scallions, separating the white and green parts.
