1To prepare the litti dough, combine Atta flour, 30 grams Ghee, and 10 grams Salt in a large bowl. Gradually add Water and knead until a firm, smooth dough is formed. Cover and let it rest for 20 minutes.
2For the sattu stuffing, in a separate bowl, mix Sattu, 50 grams finely chopped Onion, 5 grams finely chopped Green chili, grated Ginger, minced Garlic, 10 grams Fresh cilantro, 30 grams Mustard oil, Lemon juice, Nigella seeds, Carom seeds, Red chili powder, 5 grams Salt, and Mango pickle masala. Mix well until everything is evenly combined and has a crumbly texture.
3Divide the litti dough into equal small portions. Flatten each portion into a disc, place a spoonful of the sattu stuffing in the center, and carefully bring the edges together to seal, forming a smooth ball. Repeat for all portions.
