Place the Pork belly block cubes and Kombu in a large pot. Add 1500 grams of Water to cover the Pork belly block. Bring to a boil over high heat, then reduce heat and simmer for 30 minutes, skimming off any scum.

Drain the Pork belly block and rinse each piece thoroughly under cold running Water to remove any remaining impurities. Discard the Kombu and the cooking water.
