1Wash the Lemons thoroughly. Using a fine grater, carefully zest two of the Lemons, avoiding the bitter white pith. Set the lemon zest aside. Juice all of the Lemons, ensuring no seeds are present, and set the lemon juice aside.
2In a medium saucepan, combine the Granulated sugar and 250 grams of Water. Heat over medium heat, stirring constantly until the Granulated sugar is completely dissolved, creating a simple syrup. Do not boil vigorously.
3Remove the saucepan from the heat. Add the reserved lemon zest and the Fresh mint leaves to the hot syrup. Stir gently to submerge the mint and zest. Let the mixture steep for at least 30 minutes, or longer for a stronger mint flavor.
