Chocolate-Dipped Orange Peel

Peel 1 large orange, avoiding the white pith, and cut the peel into thin strips.

Blanch the orange peel strips in boiling water for 2 minutes, then drain.

Combine 26g sugar and 655g orange in a saucepan and cook over medium heat until syrupy.
