While the dough rests, prepare the filling. Place the raisins in a small bowl and cover with the rum to soak. Peel, core, and thinly slice the Golden Delicious apples.

In a large bowl, combine the sliced Golden Delicious apples, chopped walnuts, pine nuts, granulated sugar, lemon zest, and ground cinnamon. Drain the rum-soaked raisins and add them to the apple mixture, tossing gently to combine all ingredients.
