Carefully separate the fresh rose petals from their stems and remove any green or white parts at the base. Rinse the fresh rose petals gently under cold water and pat them dry with a clean cloth.

In a large non-reactive bowl, combine the clean fresh rose petals with the granulated sugar and lemon juice. Gently massage the fresh rose petals with your hands for a few minutes to release their fragrance and color. Cover the bowl and let it rest at room temperature for at least 2 hours, or preferably overnight, to allow the flavors to meld.

Transfer the rose petal mixture to a large pot. Add the water, cinnamon stick, and cloves to the pot.
