1Wash and peel the carrots. Cut the carrots into smaller, manageable pieces.
2In a blender, combine the chopped carrots, 500g of water, and piloncillo. Blend until the mixture is very smooth and no large pieces of carrots remain.
3Strain the blended mixture through a fine-mesh sieve into a large pitcher, pressing down on the solids with a spoon or spatula to extract as much liquid as possible. Discard the strained carrot pulp.
