1Wash and chop the potato, pumpkin, eggplant, drumstick, and green beans into medium-sized pieces.
2In a grinder, combine black mustard seeds, yellow mustard seeds, garlic, green chili, and ginger with a small amount of water. Grind to a very smooth paste.
3Heat mustard oil in a heavy-bottomed pan or kadai over medium heat until it shimmers.
