Rinse Dried Lotus Seeds thoroughly and soak them in ample Water overnight. Drain and remove the bitter green germ from the center of each lotus seed.

Boil the soaked Dried Lotus Seeds in fresh Water for 1-2 hours until very soft. Drain and blend them into a smooth paste using a food processor or blender, adding a small amount of Water if necessary to achieve a smooth consistency.

Heat 100 grams of Peanut Oil in a wok over medium heat. Add the blended lotus seed paste and Granulated Sugar. Stir continuously, pressing out any lumps, until the paste thickens and pulls away from the sides of the wok, becoming a firm, non-sticky ball. This process can take 30-45 minutes. Let the lotus seed paste cool completely.
