Place the rinsed white rice in a large pot and add 2000 grams of water. Bring the water to a rolling boil over high heat.

Once boiling, reduce the heat to low, cover the pot, and simmer for 60 minutes, stirring occasionally to prevent sticking. The white rice should begin to break down and the congee should thicken.
