1Rinse the live shrimp thoroughly under cold running water. Prepare an ice bath in a large bowl with ice cubes and cold water.
2Quickly blanch the live shrimp in boiling water for no more than 10-15 seconds until they just turn pink. Immediately transfer the shrimp to the ice bath to stop the cooking process and ensure a firm texture.
3Once the shrimp are completely chilled, drain them well and set aside. Do not remove heads or shells.
