1Rinse the Gastrodia elata slices thoroughly under cold water to remove any impurities. Set aside.
2Clean the chicken pieces and pat them dry. In a large pot, bring a generous amount of water to a rolling boil. Add the chicken pieces along with half of the Ginger slices and 15 grams of Shaoxing wine. Blanch the chicken for 3-5 minutes to remove impurities and scum. Skim off any foam that rises to the surface.
3Remove the blanched chicken pieces from the pot and rinse them under cold running water to clean off any remaining scum. Discard the blanching water.
