1In a large bowl, dissolve fresh yeast and granulated sugar in warm water. Let it sit for 5-10 minutes until foamy.
2Add wheat flour, salt, and 30 grams of olive oil to the yeast mixture. Knead the dough for 8-10 minutes until it is smooth and elastic. Cover the bowl with a clean cloth and let the dough rise in a warm place for 60-90 minutes, or until it has doubled in size.
3While the dough is rising, prepare the filling. Finely chop the onion, tomato, green bell pepper, and red bell pepper into very small pieces. Finely chop the fresh parsley.
