1Peel and dice the Potatoes into small, uniform cubes.
2Heat the Vegetable oil in a large skillet over medium-high heat. Add the diced Potatoes and cook, stirring occasionally, until tender and lightly golden brown, about 10-12 minutes. Season the Potatoes with a pinch of Salt.
3While the Potatoes cook, finely dice the White onion, mince the Serrano chile, and mince the Garlic.
