1Wash the dried jujubes thoroughly. Place the dried jujubes in a bowl and cover with 500g of warm water. Let them rehydrate for at least 30 minutes until softened.
2Drain the rehydrated jujubes, reserving 100g of the soaking water. Pit the rehydrated jujubes and finely chop them. For a smoother texture, some can be pureed with a small amount of the reserved soaking water.
3In a large mixing bowl, combine the sweet rice flour, granulated sugar, and fine sea salt.
