1Wash and peel the Sweet potato, then cut it into approximately 2cm thick slices.
2Arrange the Sweet potato slices in a steamer basket and steam over high heat for 15-20 minutes, or until they are very tender and easily pierced with a fork.
3Carefully remove the steamed Sweet potato from the steamer and transfer to a large mixing bowl. Mash the Sweet potato thoroughly with a fork or potato masher until smooth, ensuring no large lumps remain.
