1Carefully open the fresh sea urchins and extract the bright orange roe (gonads) using a small spoon. Place the fresh sea urchin roe in a small bowl, ensuring no shell fragments remain.
2Bring a large pot of water to a rolling boil. Add 30 grams of sea salt to the boiling water.
3In a wide skillet, heat 60 grams of extra-virgin olive oil over medium-low heat. Add the thinly sliced Garlic and Red pepper flakes, gently sautéing until the Garlic is fragrant and lightly golden, being careful not to burn it.
