1Remove the casing from the Mexican chorizo. Heat a large skillet over medium heat and add the Mexican chorizo. Cook, breaking it up with a spoon, until it is fully cooked and browned, approximately 8-10 minutes. Drain off any excess fat and set the cooked Mexican chorizo aside.
2While the Mexican chorizo cooks, finely dice the white onion and serrano pepper. Roughly chop the fresh cilantro.
3In a medium bowl, whisk the large eggs with the salt until well combined.
