1Heat the vegetable oil in a large non-stick skillet over medium-high heat.
2Add the diced Russet potatoes to the hot oil and fry, stirring occasionally, until golden brown and tender, about 10-15 minutes. Season the Russet potatoes with a pinch of Kosher salt during cooking.
3Once the Russet potatoes are cooked, remove them from the skillet with a slotted spoon and set aside, leaving about 15 grams of vegetable oil in the skillet.
