Thoroughly clean the Lampredotto under cold running water, removing any impurities and excess fat.
In a large pot, combine the cleaned Lampredotto, Carrot, Celery stalk, White onion, San Marzano tomatoes, Black peppercorns, Bay leaf, and Sea salt.
Add Water to cover the Lampredotto completely. Bring the mixture to a boil over high heat, then reduce the heat to a gentle simmer.
