1Slice the pork belly into bite-sized pieces. Heat a large pot or deep pan over medium-high heat and add the pork belly, cooking until browned and some fat has rendered.
2Add the yellow onion and minced garlic to the pot with the pork belly. Sauté for 3 minutes until the yellow onion softens.
3Stir in the aged kimchi and granulated sugar. Continue to sauté for 5 minutes, allowing the aged kimchi to soften and release its flavors.
