1Wash and thoroughly dry the carrots, cauliflower, green chilies, ginger, and garlic. Ensure no moisture remains on any of the vegetables.
2Chop carrots into 1-inch pieces, break cauliflower into small florets, slit green chilies lengthwise, julienne ginger, and keep garlic cloves whole.
3In a large, clean bowl, combine the chopped carrots, cauliflower, slit green chilies, julienned ginger, and whole garlic. Add 20 grams of salt and turmeric powder. Mix well and let it sit for 4-6 hours, or overnight, to release moisture.
